Momma & Me Gluten Free Mug Muffins

Hello, Sweet Friends! I thought I’d pop in for a moment to share a recipe with you and promise that next week, I’ll post some photos of the many, MANY projects we’ve been throwing ourselves into around here before Baby Eli comes. From Eli’s pallet-planked wall to a tutorial I’ve been working on about chalk paint, I have so much to tell you about and my grand plan is one final push at getting things done before I slow down, blog it all and just savor the last weeks of this pregnancy.

Okay, so I should preface this recipe with the fact that it is NOT Paleo. Honestly, I’ve only stuck with Paleo-foods about 75% (er, maybe less than that some weeks) of the time during this pregnancy. I’ve tried to allow myself some grace while not going overboard and as a result, I’m about 30 pounds lighter than I was at this point with Ada. The number one thing I’ve craved this pregnancy is blueberries and in particular, blueberry muffins. Oh. I just swoon thinking of a blueberry muffin right now. I’ll tell you, this baby has summer in his soul because all I want is grilled food, salads and fruit.

I sometimes break down and spend the $7 for four Udi’s blueberry muffins but I started playing around with Gluten Free Bisquick to make a fast and easy muffin that wouldn’t complicate my already-busy mornings. At our house, mornings are devoted to getting my freelance work finished while Ada plays quietly or watches TV so breakfast has to be fast. What I love about this recipe is that it takes care of breakfast quickly for both of us and it’s versatile, allowing me to use whatever I have on hand. Get creative with it, Friends!

Gluten Free Lemon-Blueberry Mug Muffins
A fast and versatile breakfast for two!

Ingredients
1/3 cup Gluten Free Bisquick® mix
1/4 cup granulated sugar
3 tablespoons plus 1 teaspoon vanilla almon milk
3 tablespoons vegetable oil
Splash of lemon extract
1 egg
1/4 cup fresh blueberries
Instructions
In a medium bowl, mix all ingredients. Pour batter into two greased mugs. Microwave each mug for 2 to 2 1/2 minutes. Enjoy!
